Easy, Affordable Nutrition That Actually Tastes Good

Nutrition doesn’t have to be complicated, or expensive; something we preach at Nutrition Education for All. In fact, it’s the simplest recipes that always taste the best.
Nutrition can be easy, inexpensive, and still taste good!
There are many ways to make meals nutritious, delicious, and inexpensive. Some of our favorite tips are to shop at farmers markets or locally, buy canned or frozen items, shop sales or deals at grocery stores, and buy produce that is in season. These are all ways to decrease your weekly shopping costs, while also buying foods that your family will enjoy.
One of our favorite, easy, and inexpensive meal is one pan chicken and vegetables.
Ingredients:
One pack of chicken breast ($6.64 for 1.85 pounds).
Broccoli, cauliflower, and carrot mix (frozen- $1.09).
Sweet potatoes ($0.80 per pound).
Olive oil ($6.39 for 17oz bottle)
Salt, pepper, and garlic seasoning ($3.65).
Instructions:
Preheat oven to 425°F.
Season chicken with the salt, pepper, garlic seasoning (on both sides).
Slice the potatoes into cubes, season potatoes and vegetables with 2 tbsp olive oil, salt, pepper, and garlic seasoning.
Put in oven for 20 minutes (flip the chicken halfway) or until the chicken reaches an internal temperature of 165°F.
Serve and enjoy!
This meal is not only affordable, but also is a well-balanced meal that has protein, carbohydrates, fats, and fiber. All of which can help keep us full, energized, and provide us with the important nutrients we need daily.
The chicken is a great source of lean protein, that helps build and repair our muscles.
The vegetables protein great sources of fiber, vitamins A, C, K, and antioxidants.
Sweet potatoes provide fiber, potassium, and antioxidants.
Olive oil is a great healthy fat that can provide anti-inflammatory properties, and vitamin E. It is a great swap for butter, when looking for a heart healthy fat!
This meal is easily customizable, you can swap out or add other protein, vegetables, fats, and carbohydrates based on your preferences and what you have at home!
